Keto White Chocolate Peanut Butter Cups

Ingredients:

  • 1 cup peanut butter
  • 1/2 cup coconut oil
  • 1/4 cup powdered erythritol
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1 cup white chocolate chips

Instructions:

  1. Line a muffin tin with paper liners.
  2. In a medium saucepan, melt the peanut butter, coconut oil, erythritol, vanilla extract, and salt over low heat, stirring until well combined.
  3. Remove the saucepan from heat and let cool slightly.
  4. Divide the peanut butter mixture evenly among the muffin cups, filling each cup about 1/3 of the way full.
  5. Place the muffin tin in the freezer for 15 minutes to firm up the peanut butter layer.
  6. In a medium saucepan, melt the white chocolate chips over low heat, stirring until smooth.
  7. Remove the muffin tin from the freezer and pour the melted white chocolate on top of the peanut butter layer in each cup, filling the cups to the top.
  8. Place the muffin tin back in the freezer for an additional 15 minutes to set the white chocolate layer.
  9. Remove the muffin tin from the freezer and let the peanut butter cups sit at room temperature for 5-10 minutes before serving.
  10. Store in an airtight container in the refrigerator for up to 1 week.
