Ingredients:
- 1 cup peanut butter
- 1/2 cup coconut oil
- 1/4 cup powdered erythritol
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1 cup white chocolate chips
Instructions:
- Line a muffin tin with paper liners.
- In a medium saucepan, melt the peanut butter, coconut oil, erythritol, vanilla extract, and salt over low heat, stirring until well combined.
- Remove the saucepan from heat and let cool slightly.
- Divide the peanut butter mixture evenly among the muffin cups, filling each cup about 1/3 of the way full.
- Place the muffin tin in the freezer for 15 minutes to firm up the peanut butter layer.
- In a medium saucepan, melt the white chocolate chips over low heat, stirring until smooth.
- Remove the muffin tin from the freezer and pour the melted white chocolate on top of the peanut butter layer in each cup, filling the cups to the top.
- Place the muffin tin back in the freezer for an additional 15 minutes to set the white chocolate layer.
- Remove the muffin tin from the freezer and let the peanut butter cups sit at room temperature for 5-10 minutes before serving.
- Store in an airtight container in the refrigerator for up to 1 week.
