Ingredients:

For the cake:

1 Keto-friendly cake mix (vanilla or yellow)
1/2 cup unsweetened cocoa powder
1/2 cup granulated low-carb sweetener (e.g., erythritol or monk fruit)
2 cups sugar-free chocolate chips
1 cup sugar-free chocolate syrup

For the frosting:

8 oz tub of sugar-free whipped topping (e.g., Cool Whip or a homemade low-carb version)
2 cups unsweetened shredded coconut

Calories: Approximately 250-300 calories
Total Carbohydrates: Approximately 10-15 grams
Dietary Fiber: Approximately 5-7 grams

Instructions:

Preheat your oven to 350°F (180°C). Grease a 9×13 baking dish or use a similar-sized dish lined with parchment paper. Mix the keto-friendly cake according to the package instructions, adding unsweetened cocoa powder and your choice of granulated low-carb sweetener. Blend well.

Pour the cake mixture into the prepared baking dish and spread it evenly. Sprinkle 2 cups of sugar-free chocolate chips over the top of the cake.

Bake for about 30 minutes, or until the cake is done. Remove it from the oven.

Using a meat fork or a similar tool, poke holes in the hot cake.

Warm the sugar-free chocolate syrup and pour it over the hot cake. Cover the cake and let it cool overnight.

In a bowl, mix the sugar-free whipped topping and unsweetened shredded coconut together for the frosting.

Spread the whipped topping and coconut mixture over the cake as frosting.

Chill the cake in the refrigerator until ready to serve.
