Keto Chocolate Fudge Cookies

Ingredients:

  • 2 cups almond flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, room temperature
  • 1/2 cup Swerve or another low-carb sweetener
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sugar-free dark chocolate chips

Instructions:

  1. Preheat oven to 350°F (180°C). Line a large baking sheet with parchment paper.
  2. In a medium bowl, whisk together the almond flour, cocoa powder, baking powder, and salt.
  3. In a large bowl, beat the butter and sweetener with an electric mixer until creamy. Beat in the eggs and vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients and mix until well combined. Stir in the chocolate chips.
  5. Using a cookie scoop or tablespoon, drop dough onto the prepared baking sheet, spacing them 2 inches apart.
  6. Bake for 12-15 minutes, or until set. Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
