  • For the bottom layer
  • 9 eggs separated
  • ¼ cup of coconut flour
  • ¼ cup of cocoa powder unsweetened
  • 1 cup of sweetener (Swerve)
  • 1 teaspoon of baking powder
  • 1 teaspoon of vanilla essence
  • ½ cup (125 g) of melted butter
  • 1 pinch of salt
  • For the cream layer
  • 1 cup (250g) mascarpone cheese
  • 2 cups (500 ml) heavy cream
  • ½ cup of sweetener or more if you like it sweeter
  • 1 teaspoon of vanilla essence
  • ½ cup of Cherries 🍒 for the inside and few cherries 🍒 for the top to look nice 🍒🍒🍒
  • Dark shredded Chocolate 🍫 to garnish.

INSTRUCTIONS

  1. Separate egg yolks and egg whites.
  2. Mix egg yolks with coconut flour, cocoa powder, melted butter, vanilla, baking powder, and a pinch of salt.
  3. Beat the egg whites with sweetener.
  4. Gently mix both mixtures together (mixture with egg yolks and egg whites).
  5. Put the mixture in 11 inch or 28 cm baking dish and bake on 175°C for 20 minutes or until mixture baked.
  6. When the bottom layer is baked, set it to cool.
  7. In the mean time mix mascarpone cheese, heavy cream, sweetener and vanilla until thick mixture is formed,
  8. When the bottom layer is cooled, cut it in the middle with a large knife.
  9. Put one half of the cream on the bottom layer and cherries on top.
  10. Cover cream layer and cherries with second part of bottom layer.
  11. Put another half of the cream on the cake and decorate it as you like – with cherries, chocolate, etc.
