INGREDIENTS

  • Eggplant ingredients:
  • 1 medium-sized eggplant, sliced into rounds 280 g/9.87 oz
  • Salt 2 pinch
  • 1 whisked egg
  • Grated Parmesan cheese ½ cup/50 g/1.76 oz
  • Gluten-free almond flour ½ cup/50 g/1.76 oz
  • Topping ingredients
  • Tomato sauce/tomato passata  (sugar-free and low-carb) ½ cup/110 ml
  • Shredded mozzarella cheese 1 cup/100 g/3.5 oz
  • Oregano and basil (to taste)

INSTRUCTIONS

Instructions:

1. Prepare eggplant – slice them into rounds and toss with 2 pinches of salt. Let them stay like that for 10 to 15 minutes until they release the excess moisture. Remove the moisture with a paper towel.
2. Combine the grated Parmesan cheese and gluten-free almond flour in a plate or a shallow bowl. Mix well.
3. Dip each eggplant slice into the whisked egg, ensuring both sides are coated evenly.
4. Press each side of the eggplant slice into the Parmesan and almond flour mixture, coating it thoroughly.
5. Place the coated eggplant slices onto the prepared baking sheet, leaving some space between each slice.
6. Bake the eggplant bites in a preheated oven at 180 C/350 F for about 20-25 minutes until they turn golden brown and crispy.

Topping instructions:

1. Spoon a dollop of tomato sauce onto each eggplant slice, spreading it evenly.
2. Sprinkle the shredded mozzarella cheese on top of the tomato sauce.
3. Add a pinch of oregano and basil to enhance the flavors.
4. Place the baking sheet back into the oven and bake for an additional 5-10 minutes, or until the cheese has melted.
5. Once done, remove the eggplant slices from the oven and let them cool for a few minutes.
