Ingredients:

5 large eggs
16g baking powder
1 1/2 cups (192g) powdered erythritol or your preferred keto-friendly sweetener
1 1/2 cups (336g) unsalted butter, softened
1/2 cup (64g) almond flour
1 1/4 cups (120g) coconut flour
A pinch of salt
1 cup (240g) plain Greek yogurt or coconut yogurt (unsweetened)
1 teaspoon vanilla extract (sugar-free)

Instructions:

Preheat your oven to 360°F (180°C). Grease a 22cm cake pan or line it with parchment paper.

In a large mixing bowl, combine the softened butter and powdered erythritol (or your preferred keto-friendly sweetener). Beat them together until the mixture is creamy and well combined.

Add the eggs one at a time, beating well after each addition.

In a separate bowl, combine the almond flour, coconut flour, baking powder, and a pinch of salt.

Gradually add the dry ingredients to the wet mixture, alternating with the yogurt. Start and end with the dry ingredients. Mix until you have a smooth batter.

Stir in the vanilla extract to the batter.

Pour the batter into the prepared cake pan and spread it evenly.

Bake in the preheated oven for about 40 minutes or until a toothpick inserted into the center comes out clean.

Allow the cake to cool in the pan for a while, then transfer it to a wire rack to cool completely.
