Baked Sweet Onion Cheddar Dip

Ingredients:

1 1/4 cups finely chopped yellow sweet onions (Maya, Vidalia, etc)
1 garlic clove, minced
1/4 cup mayonnaise (use a keto-friendly brand)
1/4 cup plain Greek yogurt (full-fat) or 1/4 cup sour cream
1/2 cup grated sharp cheddar cheese
Tabasco sauce, to taste
1/8 teaspoon curry powder (optional and can be omitted for lower carbs)
1/3 cup grated parmesan cheese
1/8 teaspoon smoked Spanish paprika or 1/8 teaspoon dried ancho chile powder or 1/8 teaspoon sweet paprika
1 tablespoon chopped green onion, for garnish

Directions:

Preheat your oven to 350°F (175°C).

In a bowl, mix together the finely chopped onions, minced garlic, mayonnaise, Greek yogurt (or sour cream), grated sharp cheddar cheese, and Tabasco sauce (and curry powder if using).

Spread the mixture into a lightly greased small baking dish.

Top with grated parmesan and sprinkle with paprika to taste. You can use ground ancho chile powder for a spicier kick if preferred.

Bake in the preheated 350°F (175°C) oven for 25 to 30 minutes or until it’s bubbly and lightly browned on top.

Garnish with chopped green onions (scallions).

 

Serve hot or warm with keto-friendly crackers, low-carb bread, or raw vegetable dippers.
