ASPARAGUS STUFFED CHICKEN BREAST

Ingredients:

  • 4 chicken breasts, boneless and skinless
  • 1 bunch of asparagus, trimmed and washed
  • 4 oz cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup shredded mozzarella cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper, to taste
  • 2 tablespoons olive oil

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a medium bowl, mix together the softened cream cheese, Parmesan cheese, mozzarella cheese, garlic powder, onion powder, salt, and pepper.
  3. Lay the chicken breasts flat on a cutting board and use a sharp knife to slice them in half lengthwise, creating a pocket for the stuffing.
  4. Spoon the cheese mixture into each chicken breast pocket, then add 3-4 asparagus spears to each pocket.
  5. Use toothpicks to secure the chicken breasts closed.
  6. Heat the olive oil in an oven-safe skillet over medium-high heat.
  7. Once the oil is hot, add the chicken breasts and cook for 3-4 minutes on each side, until browned.
  8. Transfer the skillet to the preheated oven and bake for 20-25 minutes, until the chicken is cooked through and the cheese is melted and bubbly.
  9. Remove the skillet from the oven and let the chicken rest for a few minutes before serving.
