Ingredients:

For the Roasted Garlic:

  • 2 heads of garlic
  • 1 tablespoon olive oil
  • Salt and black pepper to taste

For the Soup:

  • 1 whole chicken (approximately 4 pounds), skin removed
  • 2 tablespoons olive oil
  • 1 large onion, finely chopped
  • 3 carrots, peeled and diced
  • 3 celery stalks, diced
  • 4 cloves garlic, minced
  • 8 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and black pepper to taste
  • 1 cup orzo pasta, uncooked
  • Fresh parsley for garnish

Instructions:

Step 1: Roasting the Garlic

Preheat your oven to 400°F (200°C). Cut off the top of each garlic head to expose the cloves. Place them on a sheet of aluminum foil, drizzle with olive oil, and sprinkle with salt and black pepper. Wrap the garlic in the foil and roast in the oven for 40-45 minutes or until the cloves are soft and golden. Allow them to cool before squeezing out the roasted garlic.

Step 2: Preparing the Chicken

In a large pot, heat olive oil over medium heat. Add the whole chicken and brown it on all sides. This step enhances the flavor profile of the soup.

Step 3: Sautéing Aromatics

Add chopped onion, diced carrots, diced celery, and minced garlic to the pot. Sauté until the vegetables are tender and aromatic, creating a flavorful base for the soup.

Step 4: Simmering the Broth

Pour in the chicken broth, incorporating the rich flavors of the browned chicken into the broth. Add dried thyme, dried rosemary, salt, and black pepper. Bring the soup to a gentle boil, then reduce the heat to low and simmer for about 45 minutes, allowing the flavors to meld.

Step 5: Shredding the Chicken

Remove the whole chicken from the pot and shred the meat using forks. Discard the bones and return the shredded chicken to the soup, infusing it with succulent bites of poultry goodness.

Step 6: Adding the Orzo Pasta

Stir in the uncooked orzo pasta and continue simmering for an additional 10-12 minutes or until the orzo is al dente, contributing a delightful texture to the soup.

Step 7: Infusing with Roasted Garlic

Squeeze the roasted garlic cloves into the soup, ensuring that the velvety essence of roasted garlic permeates every spoonful, adding depth and complexity to the flavor profile.

Step 8: Garnishing and Serving

Garnish the Roasted Garlic Chicken Soup with fresh parsley for a burst of color and freshness. Ladle this comforting creation into bowls, and serve hot, allowing the warmth and aroma to envelop your senses.
