Low-Carb Chicken Bacon Ranch Pinwheels

Ingredients

  • 16 ounces full fat cream cheese, softened
  • 2 tablespoons dry ranch mix
  • 1 cup chopped cooked chicken
  • 1 cup shredded cheddar cheese
  • 4 slices cooked bacon, chopped
  • Handful of parsley, chopped
  • Salt and pepper, to taste
  • 6 low-carb tortillas

Directions

  1. In a large bowl, beat the cream cheese with an electric mixer until smooth and creamy. Add the ranch mix and beat until well combined.
  2. Stir in the chicken, cheddar cheese, bacon and parsley. Season with salt and pepper to taste.
  3. Spread about 1/3 cup of the cheese mixture evenly over each tortilla, leaving a 1/2 inch border around the edges.
  4. Roll up each tortilla tightly and wrap in plastic wrap. Refrigerate for at least an hour or up to overnight.
  5. When ready to serve, unwrap the tortillas and slice into 1-2 inch rounds. Arrange on a platter and enjoy!
