This keto tiramisu is a decadent dessert that tastes just like the classic Italian treat but with fewer carbs. It has a moist almond flour cake layer soaked in coffee and rum, and a creamy mascarpone filling that is sugar-free and gluten-free.
INGREDIENTS
Cake Layer
2 cups almond flour
2/3 cup powdered sweetener
1/3 cup protein powder unflavored
1/3 cup coconut flour
1 tbsp baking powder
4 large eggs room temperature
1/2 cup butter melted
2/3 cup unsweetened almond milk
1 tsp vanilla extract
1/4 tsp salt
Coffee Syrup
1/2 cup espresso or strongly brewed coffee
2 tbsp dark rum or brandy
Mascarpone Filling
16 oz mascarpone room temperature
3/4 cup heavy whipping cream
3/4 cup powdered sweetener
3/4 tsp vanilla extract
Garnish
1 tsp cocoa powder
INSTRUCTIONS
Preheat the oven to 350°F/ 180°C and line a 9×13 inch sheet pan with parchment paper.
In a large bowl, whisk together the almond flour, sweetener, coconut flour, protein powder, baking powder, and salt.
Add in the eggs, almond milk, butter, and vanilla extract. Stir until well combined.
Pour the batter into the prepared pan and spread it evenly. Bake for 15 minutes or until golden and firm.
Let the cake cool completely on a wire rack.
In a small bowl, stir together the coffee and rum.
In a large bowl, beat the mascarpone, heavy cream, sweetener, and vanilla extract with an electric mixer until smooth and fluffy.
Cut the cake into 2 equal pieces. Place one piece on a serving platter and brush half of the coffee syrup over it. Spread half of the mascarpone filling over the cake layer.
Place the other cake piece on top and brush with the remaining coffee syrup. Spread the rest of the mascarpone filling over the cake.
Dust with cocoa powder and refrigerate for at least 4 hours or overnight before slicing and serving.
