These bites are a perfect combination of creamy, sweet, and tangy, making them a satisfying dessert option for those looking to indulge without derailing their diet.
INGREDIENTS
- 9–11 medium-size strawberries, rinsed and dried
- 4 ounces of cream cheese or coconut cream
- 2 tablespoons coconut cream or heavy cream
- 2 tablespoons powdered lakanto sweetener* (or your favorite keto sweetener)
- 1/4 teaspoon vanilla extract
INSTRUCTIONS
- Use a spoon to scoop the center of the strawberries out. Discard them to use for later or freeze (don’t waste them!)
- In a medium bowl, mix the cream cheese, cream, sweetener, and vanilla until smooth and creamy. Taste the filling and add more sweetener if needed.
- Use a piping bag fitted with a decorative top to fill the strawberries. Alternatively, you can use a plastic bag with the tip cut off to fill the strawberries.
- Serve immediately or store in the refrigerator for up to 48 hours.

NOTES
Taste the filling before filling the strawberries. Add more sweetener and mix well if you prefer the cheesecake filling to be sweeter.
