Here’s a detailed keto-friendly recipe for Peanut Butter Swirl No-Bake Cheesecake:

INGREDIENTS:

  • 1 box of sugar-free pudding of your choice
  • 2 cups heavy whipping cream
  • 1 or 2 packages of cream cheese, softened
  • Keto-friendly sweetener to taste (e.g., stevia)
  • Low-carb nuts (such as almonds or walnuts), pulsed in a food processor
  • Flax meal
  • Hemp hearts
  • Melted butter
  • 2 tablespoons peanut butter

INSTRUCTIONS:

  1. In a saucepan, heat the sugar-free pudding mix and heavy whipping cream together until well combined. Allow the mixture to cool.
  2. In a large mixing bowl, beat the softened cream cheese with a hand mixer until smooth. If you’re short on cream cheese, you can add a couple of gelatin packets to the pudding mixture before it cools to help thicken it.
  3. Add the keto-friendly sweetener to taste to the cream cheese mixture and continue to beat until fully incorporated.
  4. For the crust, combine the pulsed low-carb nuts with flax meal, hemp hearts, and melted butter. Press the mixture firmly into the bottom of a springform pan. Freeze the crust while you prepare the filling.
  5. Once the crust is set, pour the cooled pudding mixture over it, spreading it evenly.
  6. Melt the peanut butter and drizzle it over the top of the cheesecake filling. Use a butter knife to create a swirl pattern.
  7. Refrigerate the cheesecake for at least a few hours, or until set.
  8. Slice and serve, enjoying the creamy texture and delicious peanut butter swirl. Remember, each slice contains approximately 5 carbs, making it a satisfying and indulgent low-carb treat
