Hot Chicken Mashed Cauliflower Bowl Recipe:
Ingredients:
- 5 pounds of boneless, skinless chicken thighs or tenderloins, cut into bites
- 1 tablespoon cayenne pepper
- 1 tablespoon chili powder
- 1 tablespoon cumin
- 1 tablespoon paprika
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- Lawry’s seasoned pepper, to taste
- Crushed pork rinds, to taste
- Almond flour, to taste
- Baking powder, to taste
- 1 steam bag of cauliflower
- Shredded cheddar cheese, to taste
- Ranch dressing, to taste
- Freeze-dried chives, to taste
- Parsley, to garnish
Instructions:
In a bowl, mix together the cayenne pepper, chili powder, cumin, paprika, garlic powder, onion powder, Lawry’s seasoned pepper, crushed pork rinds, almond flour, and baking powder.
Add the chicken bites to the bowl and toss to coat evenly.
Preheat the air fryer to 400°F (200°C).
Place the chicken bites in the air fryer basket and cook for 8 minutes or until the internal temperature reaches 165°F (74°C).
While the chicken is cooking, microwave the steamed bag of cauliflower according to the package instructions.
Once the cauliflower is cooked, add it to a blender and blend until smooth. Add additional ingredients like sour cream, cream cheese, or heavy cream to taste, if desired.
Spoon the mashed cauliflower into a bowl and sprinkle with shredded cheddar cheese.
Add the cooked chicken bites on top of the mashed cauliflower.
Drizzle ranch dressing over the chicken and sprinkle freeze-dried chives on top.
Garnish with parsley and serve hot.
