In a large mixing bowl, beat together eggs, melted butter, almond milk, and vanilla extract until frothy (approximately 2 minutes).

Add coconut flour, sweetener, cocoa powder, baking powder, and a pinch of salt to the egg mixture. Mix until the batter achieves a smooth and creamy consistency.

Divide the batter between the prepared pans and bake for 20 minutes until firm to the touch. Allow the cake layers to cool completely.

Frosting Perfection: In a saucepan over medium heat, combine heavy cream, brown sweetener replacement, egg yolks, and butter for the filling. Bring to a gentle boil, stirring occasionally until the butter melts.

Sprinkle xanthan gum and whisk to combine. Simmer on low heat for about 5 minutes until the mixture thickens. Remove from heat and add shredded coconut, vanilla, and toasted chopped pecans.

Let the filling cool completely before assembling the cake. The mixture will continue to cool as it sets.

Cake Assembly: Place the first layer on a cake stand or plate, topping it with half of the coconut pecan filling, spreading it evenly. Repeat the process with the second layer and finish with the remaining filling.

Decorate the cake with coconut flakes and toasted pecans. Refrigerate for at least 2 hours, preferably overnight, allowing the flavors to meld.

Savor the Delight: Slice and indulge in the luxurious layers of our Keto German Chocolate Cake, where each bite is a journey into a world of rich flavors and textures.
