KETO CHAFFLE REUBEN SANDWICH

Chaffle Reuben Sandwich

CHAFFLE:

  • 1 egg
  • 2 tbsp almond flour
  • 1/4 tsp garlic salt
  • 1/4 tsp baking powder
  • 1/2 cup shredded mozzarella cheese

INSTRUCTIONS:

  1. Preheat your waffle maker.
  2. In a bowl, mix together the egg, almond flour, garlic salt, baking powder, and shredded mozzarella cheese until well combined.
  3. Pour the chaffle batter into the preheated waffle maker and cook according to the manufacturer’s instructions. If using a full-size waffle maker, one cycle should make two chaffles. If using a mini waffle maker, divide the batter in half to make two chaffles.
  4. Once the chaffle is cooked, lightly butter one side and place it butter-side down in a skillet heated over medium-low heat.
  5. Top the chaffle with Swiss cheese, well-drained sauerkraut, corned beef, and Thousand Island dressing of your choice.
  6. Place the other chaffle on top of the fillings and lightly butter the outside.
  7. Toast the chaffle sandwich in the skillet until the cheese is melted and the chaffle is golden brown on both sides.
  8. Serve the Chaffle Reuben Sandwich hot and enjoy this delicious keto-friendly twist on a classic sandwich
