Chaffle Reuben Sandwich
CHAFFLE:
- 1 egg
- 2 tbsp almond flour
- 1/4 tsp garlic salt
- 1/4 tsp baking powder
- 1/2 cup shredded mozzarella cheese
INSTRUCTIONS:
- Preheat your waffle maker.
- In a bowl, mix together the egg, almond flour, garlic salt, baking powder, and shredded mozzarella cheese until well combined.
- Pour the chaffle batter into the preheated waffle maker and cook according to the manufacturer’s instructions. If using a full-size waffle maker, one cycle should make two chaffles. If using a mini waffle maker, divide the batter in half to make two chaffles.
- Once the chaffle is cooked, lightly butter one side and place it butter-side down in a skillet heated over medium-low heat.
- Top the chaffle with Swiss cheese, well-drained sauerkraut, corned beef, and Thousand Island dressing of your choice.
- Place the other chaffle on top of the fillings and lightly butter the outside.
