Keto Cauliflower Crust Pizza

Ingredients:

For the Cauliflower Crust:

1 medium-sized cauliflower head, cut into florets
1/2 cup grated mozzarella cheese
1/4 cup grated Parmesan cheese
1 large egg
1/2 teaspoon dried oregano
1/2 teaspoon garlic powder
Salt and pepper to taste

For the Pizza Toppings:

Low-carb pizza sauce (look for options with no added sugars)
Shredded mozzarella cheese
Your favorite keto-friendly pizza toppings (e.g., pepperoni, bell peppers, olives, mushrooms)

Instructions:

Step 1: Prepare the Cauliflower Crust

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

Place the cauliflower florets in a food processor and pulse until they resemble fine rice-like grains.

Transfer the cauliflower rice to a microwave-safe bowl and microwave it for 5-6 minutes, or until it’s cooked and soft.

Let the cauliflower rice cool for a few minutes, then transfer it to a clean kitchen towel or cheesecloth. Squeeze out as much moisture as possible.

In a mixing bowl, combine the drained cauliflower rice, grated mozzarella, grated Parmesan, egg, dried oregano, garlic powder, salt, and pepper. Mix until it forms a dough-like consistency.

Step 2: Bake the Cauliflower Crust

Place the cauliflower crust dough onto the prepared baking sheet. Use your hands to press it into a thin, even crust shape, about 1/4-inch thick.

Bake the crust in the preheated oven for 15-20 minutes, or until it becomes golden and holds together.

Step 3: Add Toppings and Bake Again

Remove the crust from the oven and let it cool slightly. You can increase the oven temperature to 450°F (230°C).

Spread a thin layer of low-carb pizza sauce over the crust, leaving a small border around the edges.

Sprinkle a generous amount of shredded mozzarella cheese on top of the sauce.

Add your chosen keto-friendly pizza toppings.

Step 4: Final Bake

Place the pizza back in the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly, and the crust edges are crisp and golden.

Remove from the oven, let it cool for a few minutes, then slice and enjoy your keto cauliflower crust pizza!
