KETO BAKED CHICKEN MOZZARELLA

Ingredients:

  • 2 pounds chicken breasts (thinly sliced)
  • 2 tsp garlic (minced)
  • 2 tsp crushed peppercorn
  • 2 tsp Italian seasoning
  • 1 28oz jar of low-sugar spaghetti or marinara sauce (such as garlic, basil, tomato spaghetti sauce)
  • 2 cups shredded Mozzarella cheese
  • Olive oil or cooking spray for greasing
  • Salt, to taste

    Instructions:

    1. Preheat the Oven: Preheat your oven to 400°F (200°C).
    2. Prepare the Chicken: If you have large chicken breasts, cut them in half lengthwise to make them thinner and more even. This will help them cook more evenly. Season the chicken with half of the minced garlic, crushed peppercorn, and Italian seasoning. You can also sprinkle a pinch of salt if desired.
    3. Grease the Baking Dish: Grease a 9×13 baking dish with olive oil or cooking spray to prevent sticking.
    4. Arrange the Chicken: Lay the seasoned chicken slices in the bottom of the greased baking dish.
    5. Add the Sauce: Pour the low-sugar spaghetti or marinara sauce over the chicken, ensuring it covers the chicken completely.
    6. Top with Mozzarella: Sprinkle the shredded Mozzarella cheese evenly over the sauced chicken.
    7. Season Again: Sprinkle the remaining minced garlic, crushed peppercorn, and Italian seasoning over the Mozzarella cheese.
    8. Bake: Place the baking dish in the preheated oven and bake for about 20-25 minutes, depending on the thickness of the chicken. The internal temperature of the chicken should reach 165°F (74°C), and the cheese should be bubbly and golden brown.
    9. Serve: Once done, remove the dish from the oven and let it rest for a few minutes. Serve the baked chicken Mozzarella over cooked spaghetti squash or cauliflower rice for a keto-friendly meal.
