These white truffles are a decadent and delicious treat that are keto and low carb friendly. They are made with butter, sugar-free white chocolate, heavy cream, and coconut rum. They are easy to make and perfect for a special occasion.
Ingredients:
- 125 g of butter
- 250 g of sugar-free white chocolate (you can use store-bought or make your own with cocoa butter, erythritol, vanilla extract, and sunflower lecithin)
- 1 tbsp of heavy cream
- 150 g of heavy cream
- 2 cl of coconut rum (you can use Malibu or make your own with rum, coconut extract, and erythritol)
Instructions:
- Break the sugar-free white chocolate into small pieces and melt it in a double boiler with a tablespoon of heavy cream. Stir occasionally until smooth and glossy.
- Remove from the heat and add the butter and coconut rum. Whisk well until well combined.
- Whip the remaining heavy cream until stiff peaks form. Gently fold it into the chocolate mixture until well incorporated.

Refrigerate the mixture for at least 2 hours or until firm enough to shape.
- Scoop out small balls of the mixture with a spoon or a melon baller. Roll them between your palms to form smooth spheres and place them on a baking sheet lined with parchment paper.
- Refrigerate the truffles for another hour or until set.
