Keto and Low-Carb Pecan Pie Bark

Ingredients:

13 almond flour or coconut flour-based low-carb crackers (check labels for carb content)
1 cup (2 sticks) unsalted butter or keto-friendly butter substitute
1 cup powdered erythritol or another keto-friendly sweetener
2 cups pecan halves, roughly chopped
1/4 teaspoon salt
1 teaspoon vanilla extract

Directions:

Step 1: Preheat your oven to 350°F (175°C) and line a rimmed sheet pan with parchment paper for easy removal.

Step 2: Lightly grease the parchment paper with butter and arrange the low-carb crackers on the baking sheet, breaking them if necessary to fit.

Step 3: In a medium saucepan over medium heat, combine the butter, powdered erythritol (or another keto-friendly sweetener), chopped pecans, and salt. Bring the mixture to a boil and cook for 2 minutes, stirring constantly.

Step 4: Remove the saucepan from the heat and stir in the vanilla extract. Immediately pour the hot mixture evenly over the low-carb crackers, ensuring the pecans are distributed evenly and that the crackers are well-covered.

Step 5: Bake in the preheated oven until the mixture is bubbly, about 10 minutes.

Step 6: Allow the pecan pie bark to cool completely in the pan. Once cooled, break it into pieces.
