Keto Chocolate Chip Cookie in a Mug
Ingredients:
•1T butter, melted and cooled
•3T almond flour
•1T sugar-free sweetener (such as Swerve or Monk Fruit)
•1 large egg yolk
•1/8tsp vanilla extract
•a pinch of salt
•1T sugar-free chocolate chips (such as Lily’s)
Instructions:
- In a microwave-safe mug, whisk together the butter, almond flour, sweetener, egg yolk, vanilla, and salt until well combined.
- Stir in the chocolate chips and spread the batter evenly in the mug.
- Microwave for 45 to 60 seconds or until the cookie is set around the edges but still soft in the center.
- Let it cool slightly and enjoy!
