This Easy Asian Cucumber Salad is the perfect keto side dish summer recipe! This low carb salad is ready in under 10 minutes and there’s no cooking required!
INGREDIENTS
- 4 cups very thinly sliced cucumber
- 1 tablespoon minced garlic
- 3 tablespoons rice vinegar
- 1 tablespoon soy sauce
- 1 tablespoon toasted sesame oil
- 1 tablespoon brown sugar monkfruit
- 1 teaspoon chili garlic sauce
- Optional toppings: green onions sesame seeds, peanuts
INSTRUCTIONS

Combine all of the sauce ingredients in a jar and shake well. If you need to, heat the sauce for 10 seconds to help the sweetener dissolve.

Pour the sauce over the thinly sliced cucumbers, toss to coat. If desired, top with sesame seeds, green onions and chopped peanuts.
