Crust:
1 3/4 cup almond flour
1/3 cup powdered sweetener
1/4 cup cocoa powder
1 tsp baking powder
1/4 tsp salt
1 large egg
2 Tbsp butter, melted
1/2 tsp vanilla
Peanut Butter Frosting
1 oz cream cheese, softened
2 Tbsp butter, softened
1/4 cup sugar free peanut butter
5 Tbsp powdered sweetener
1/2 tsp vanilla extract
1-2 Tbsp heavy whipping cream
Toppings
Sugar free peanut butter cups, chopped
Salted peanuts, chopped
Sugar free chocolate syrup
Crust:
Preheat oven to 300F and line baking pan with a silicone mat or parchment paper.
Whisk together almond flour, cocoa powder, sweetener, baking powder and salt. Stir in the egg, melted butter and vanilla until the dough forms.
Turn the dough out onto parchment or silicone mat and pat into a circle. Pat out into a circle about 11 or 12 inches in diameter. Form the edge into a smooth circle.
Bake at 300F for about 30 minutes until firm to the touch. Remove from oven and let cool.
Frosting:
Mix together cream cheese, butter and peanut butter until smooth. Beat in the sweetener and vanilla.
Add 1 Tbsp cream and beat until smooth. Add additional cream a few tsp at a time until a spreadable consistency is achieved.
Spread the frosting over the cooled crust, leaving a 1/4 inch border around the outside.
Toppings:
Sprinkle the pizza with the chopped peanut butter cups and peanuts. Drizzle with sugar free chocolate syrup.
