Instructions:
- Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- In a large skillet, brown the ground beef or ground turkey over medium heat until cooked through. Drain any excess grease.
- Add the diced onion and minced garlic to the skillet with the cooked meat. Sauté for 2-3 minutes until the onion becomes translucent.
- Stir in the chili powder, ground cumin, paprika, dried oregano, salt, and pepper. Cook for an additional 1-2 minutes to allow the flavors to meld together.
- Pour in the sugar-free tomato sauce and beef or chicken broth. Stir well to combine. Simmer for 5 minutes to allow the sauce to thicken slightly.
- Spread half of the meat mixture evenly in the bottom of the greased baking dish.
- Layer half of the diced bell pepper and half of the sliced black olives (if using) on top of the meat.
- Sprinkle half of the shredded cheddar cheese over the vegetables.
- Repeat the layers with the remaining meat mixture, bell pepper, olives, and shredded cheese.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let it cool for a few minutes.
- Garnish with freshly chopped cilantro and sliced jalapenos, if desired.
