Keto Pizza Rolls (0.5 carbs each)

Ingredients:

4 eggs

20 grams (3/4 scoop) of protein powder (or almond flour)

100 gram cream cheese

2 teaspoons baking powder

1.5 tablespoon psyllium husk powder

1.5 tablespoon xanthan gum (you can leave this out but then the dough will be denser)

175 grams shredded cheese

For the filling/topping:

75 gram tomato passata (or just use whatever tomato sauce you like with pizza)

100 gram smoked shredded ham

190 gram shredded cheese

Dried basil/oregano

How to make this:

Set oven to 200C (390F)

Whisk the eggs until they’re fluffy

Mix the dry ingredients, then add the cream cheese, shredded cheese and dry ingredients to the eggs and whisk

Once the ingredients have combined into a dough, spread it out onto a baking sheet. You can use plastic foil on top of the dough to spread it out thinly and evenly, as the dough will be kind of sticky

Place into oven for about 10 minutes, or until the dough is light golden brown

Take out the dough and turn the heat of the oven up to 225C/440F.

Now smear the tomato passata all over the “sheet” of dough. Add the shredded ham and 150 grams of cheese.

Roll the sheet together tightly (you can use the baking sheet to help with this).

Once it’s rolled up, cut into as many pieces as you want. I cut mine into 20. Try to make them the same size.

Spread the pieces out over the baking sheet, top the pieces with the remaining 40 grams of cheese, and add dried basil & oregano

Cook for another 10-12 minutes.

Assuming that you are not using pre-shredded cheese, these work out to less than 0.5 carbs and around 90-100 calories per piece. Each roll has 7.5 grams of protein too (assuming using gouda cheese & protein powder).

The total calorie breakdown is 68 % fat, 30 % protein, and 2 % carbs.
