Keto Monterey Chicken

Ingredients:

  • 4 slices cooked bacon
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 pound thin-cut boneless skinless chicken breasts (you can chop them into smaller pieces for a casserole-style presentation)
  • 6 tablespoons sugar-free BBQ sauce
  • 2/3 cup shredded cheddar cheese
  • 1/4 cup shredded Monterey Jack cheese
  • 1/2 teaspoon garlic powder
  • 1 teaspoon parsley
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

 

Instructions:

  1. Preheat the Oven: Preheat your oven’s broiler to high.
  2. Prepare the Chicken: Season both sides of the chicken breasts with salt, black pepper, and garlic powder.
  3. Sear the Chicken: In an oven-safe skillet, heat the olive oil and butter over medium-high heat. Once the pan is hot, add the chicken breasts. Sear the chicken on each side for about 4 minutes or until they develop a golden-brown crust.
  4. Simmer the Chicken: Reduce the heat to low and cover the skillet with a lid. Allow the chicken to simmer until it is cooked through. This should take about 10-15 minutes, depending on the thickness of the chicken.
  5. Add BBQ Sauce: Once the chicken is cooked through, spoon 1 1/2 tablespoons of sugar-free BBQ sauce on top of each chicken breast.
  6. Layer with Bacon: Divide the cooked bacon evenly and place it on top of each chicken breast.
  7. Cheese Layers: Sprinkle the shredded cheddar cheese on top of the bacon, followed by the shredded Monterey Jack cheese.
  8. Broil: Place the skillet on the top rack of the preheated oven. Broil on high for 2-3 minutes or until the cheese is melted and bubbly, and the chicken is nicely browned.
  9. Garnish: Remove the skillet from the oven and sprinkle parsley over the top for a fresh touch.
