Keto Ginger Candy Recipe
Ginger Candy Recipe | Homemade Crystallised Ginger Chews
– 1 cup fresh ginger, peeled and thinly sliced
– 2 cups water
– 2 cups sugar
– Additional sugar for coating
1. In a medium saucepan, combine the sliced ginger and water. Bring to a boil, then reduce heat and simmer for 45 minutes until the ginger is tender.
2. Drain the ginger, reserving 1/2 cup of the cooking liquid.
3. Return the ginger and reserved liquid to the saucepan. Add the sugar and bring to a boil, stirring constantly until the sugar dissolves.
4. Reduce the heat to medium and cook, stirring occasionally, until the ginger is translucent and the syrup thickens, about 20-25 minutes.
5. Using a slotted spoon, transfer the ginger slices to a wire rack set over a baking sheet to cool slightly.
6. Toss the ginger slices in additional sugar to coat them evenly.
7. Spread the coated ginger slices on a parchment-lined baking sheet and let them dry completely.
8. Store the ginger candy in an airtight container at room temperature.
