Keto Chocolate Cheesecake Bites

INGREDIENTS:

For the crust:

  • 1 cup almond flour
  • 2 tbsp cocoa powder
  • 2 tbsp powdered erythritol (or any keto-friendly sweetener of your choice)
  • 4 tbsp melted butter

For the filling:

  • 1 8oz block of cream cheese, softened
  • 1/4 cup powdered erythritol
  • 1 tsp vanilla extract
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup heavy whipping cream

For garnish:

  • Unsweetened whipped cream
  • Dark chocolate shavings (optional)

INSTRUCTIONS:

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease well.
  2. In a mixing bowl, combine almond flour, cocoa powder, powdered erythritol, and melted butter for the crust. Mix until well combined.
  3. Divide the crust mixture evenly among the muffin tin cups. Press the mixture firmly into the bottom of each cup to form a crust.
  4. Bake the crusts in the preheated oven for 8-10 minutes, or until set. Remove from the oven and let them cool completely.
  5. Meanwhile, prepare the filling. In a large mixing bowl, beat the softened cream cheese until smooth.
  6. Add powdered erythritol, vanilla extract, and cocoa powder to the cream cheese mixture. Beat until well combined and smooth.
  7. In a separate bowl, whip the heavy whipping cream until stiff peaks form.
  8. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
  9. Spoon the filling onto the cooled crusts, dividing it evenly among the cups.
  10. Smooth the tops of the cheesecake bites with a spatula or the back of a spoon.
  11. Place the cheesecake bites in the refrigerator to chill for at least 2 hours, or until set.
  12. Once chilled, garnish with a dollop of unsweetened whipped cream and dark chocolate shavings, if desired.
