🌱 Vegan Mozzarella Cheese

This creamy, stretchy vegan mozzarella is made from simple ingredients and comes together in under 10 minutes. It’s perfect for melting and browning, just like traditional mozzarella!

Ingredients

🛒 For the Mozzarella Base:

  • 1 cup raw cashews (soaked for 2–4 hours)

  • 1 cup water

  • 2 tablespoons tapioca starch (for stretch)

  • 1 tablespoon nutritional yeast (for cheesy flavor)

  • 1 tablespoon apple cider vinegar

  • 1 teaspoon lemon juice

  • 1 teaspoon salt

  • 1/2 teaspoon garlic powder


Instructions

  1. Soak the Cashews:

    • Soak the cashews in warm water for 2–4 hours (or boil them for 10 minutes to soften). Drain and rinse.

  2. Blend the Ingredients:

    • In a high-speed blender, combine soaked cashews, water, tapioca starch, nutritional yeast, apple cider vinegar, lemon juice, salt, and garlic powder.

    • Blend until smooth and creamy (about 1–2 minutes).

  3. Cook the Mixture:

    • Pour the mixture into a saucepan over medium heat.

    • Stir constantly with a spatula. After 2–3 minutes, the mixture will start to thicken and become stretchy.

    • Continue cooking and stirring for another 2–3 minutes until you reach a gooey, stretchy consistency.

  4. Shape and Chill:

    • For fresh mozzarella: Transfer the mixture into a mold or small bowl. Chill in the fridge for 2–3 hours until firm.

    • For melting mozzarella: Use it immediately on pizza, pasta, or grilled cheese sandwiches!

  5. Optional: Broil or Torch:

    • For that browned, blistered top, place under the broiler for 2–3 minutes or use a kitchen torch to create a golden crust.


Tips & Tricks

✅ Use tapioca starch for that perfect stretch — no other starch works quite the same!
✅ For a firmer texture, add 1 teaspoon of agar powder and chill overnight.
✅ Store in an airtight container in the fridge for up to 5 days. You can also freeze it for up to 1 month!
