📝 Ingredients

Base Muffin Batter:

  • 1½ cups all-purpose flour (or gluten-free 1:1 blend)

  • ½ cup granulated sugar (or sugar substitute like Swerve, Truvia)

  • 1 tbsp baking powder

  • ½ tsp salt

  • 1 tsp ground cinnamon

  • ½ cup unsweetened applesauce

  • ½ cup milk (almond, skim, or your choice)

  • 1 large egg

  • 1 tsp vanilla extract

Cinnamon Sugar Topping:

  • 2 tbsp granulated sugar (or sweetener)

  • 1 tsp ground cinnamon

🔪 Instructions

Step 1: Preheat the Oven

Preheat your oven to 350°F (175°C). Lightly grease a mini muffin tin or use mini muffin liners.

Step 2: Mix Dry Ingredients

In a large bowl, whisk together:

  • Flour

  • Sugar

  • Baking powder

  • Salt

  • Cinnamon

This helps distribute everything evenly.

Step 3: Mix Wet Ingredients

In another bowl, combine:

  • Applesauce

  • Milk

  • Egg

  • Vanilla

Whisk until smooth and creamy.

Step 4: Combine the Mixtures

Gently fold the wet mixture into the dry mixture. Mix just until combined—don’t overmix, or your muffins might turn out tough.

Step 5: Fill Muffin Cups

Spoon batter into the mini muffin cups, filling each about 2/3 full.

Step 6: Add Topping

In a small bowl, stir together 2 tbsp sugar + 1 tsp cinnamon. Sprinkle a pinch over the top of each muffin before baking.

Step 7: Bake

Bake for 12–15 minutes, or until a toothpick inserted in the center comes out clean. Muffins should be slightly golden on top.

Step 8: Cool & Serve

Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack. Serve warm or at room temperature.
