The best Rhubarb Cream Cheese Stuffed French Toast
Decadent Rhubarb and Cream Cheese Filled French Toast Delight
Ingredients:
1 cup rhubarb, chopped
1/4 cup sugar
1 tablespoon lemon juice
8 slices of brioche or thick-cut bread
1/2 cup cream cheese, softened
1 teaspoon vanilla extract
4 large eggs
1 cup milk
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
Butter for frying
Powdered sugar for dusting
Maple syrup for serving
Directions:
In a saucepan, combine rhubarb, sugar, and lemon juice. Cook over medium heat until the rhubarb is soft and the mixture is thickened, about 10 minutes. Let it cool slightly.
In a bowl, mix the cream cheese and vanilla extract until smooth.
Spread a layer of cream cheese mixture on 4 slices of bread. Top with a spoonful of rhubarb compote and cover with the remaining bread slices to form sandwiches.
In a shallow dish, whisk together eggs, milk, cinnamon, and nutmeg.
Heat butter in a large skillet over medium heat.
Dip each sandwich into the egg mixture, coating both sides well.
Cook the sandwiches in the skillet until golden brown on both sides and cooked through, about 3-4 minutes per side.
Serve warm, dusted with powdered sugar and drizzled with maple syrup.
