Made with Greek yogurt, oat flour, and sweetened naturally with honey or maple syrup, they’re perfect as a snack, breakfast bar, or even a light dessert.

You can whip them up in one bowl (well, almost), and they’re customizable with your favorite add-ins—mini chocolate chips, chopped nuts, or even dried fruit!


Ingredients

  • 1/2 cup natural peanut butter

  • 1/3 cup plain Greek yogurt

  • 1/4 cup honey or pure maple syrup

  • 1 large egg

  • 1 tsp vanilla extract

  • 1 cup oat flour (blend rolled oats in a food processor if you don’t have oat flour)

  • 1/2 tsp baking soda

  • 1/4 tsp ground cinnamon

  • 1/4 cup mini chocolate chips (optional but delicious)


Instructions

  1. Preheat oven to 350°F (175°C).

  2. Prepare your pan by greasing or lining an 8×8 inch baking dish with parchment paper.

  3. Mix wet ingredients: In a large bowl, whisk together the peanut butter, Greek yogurt, honey or maple syrup, egg, and vanilla until smooth.

  4. Combine dry ingredients: In a separate bowl, stir together the oat flour, baking soda, and cinnamon.

  5. Mix it all together: Gradually add the dry mixture to the wet ingredients, stirring until just combined.

  6. Add extras: Fold in mini chocolate chips, if using.

  7. Bake: Pour the batter into your prepared dish and spread it evenly. Bake for 18–22 minutes, or until a toothpick inserted in the center comes out clean.

  8. Cool and serve: Let the bars cool completely before slicing into squares.


Tips & Variations

  • No oat flour? Just pulse rolled oats in a blender or food processor until fine.

  • Make it dairy-free: Use a dairy-free yogurt alternative.

  • Extra texture: Add chopped nuts or seeds for a crunchier bite.

  • Storage: Keep in an airtight container at room temp for up to 3 days, or refrigerate for up to a week. They also freeze well!
