Garlic & rosemary focaccia bread baked straight in the drawer 👌

Garlic & Rosemary Air Fryer Focaccia

Crispy on the outside, pillowy inside—baked right in the drawer 👌

There’s something magical about freshly baked focaccia—especially when it’s infused with olive oil, garlic, and rosemary. This version is air-fryer friendly, saving you time and delivering a golden, chewy bread with minimal fuss. Perfect as a side, sandwich base, or just dipped in more olive oil.


Ingredients

  • 250g strong white bread flour

  • 1 tsp salt

  • ½ sachet (about 3.5g) dried easy-blend yeast

  • 1 tbsp olive oil (plus more for drizzling)

  • 200ml cold water

  • Fresh rosemary (to taste)

  • 1–2 garlic cloves, thinly sliced or minced

  • Fine sea salt, for finishing


Instructions

1. Mix the Dough

In a large bowl, combine the flour, salt, yeast, olive oil, and 150ml of the cold water. Mix with your hand or a spoon to form a shaggy dough.

2. Knead & Stretch

Knead the dough right in the bowl for about 5 minutes, gradually adding the remaining 50ml of water as you go. Use the stretch-and-fold method:

  • Stretch the dough up

  • Tuck it back into the center

  • Turn the bowl

  • Repeat for a few minutes

3. Knead Again on Surface

Lightly oil your work surface and knead the dough for another 5 minutes until smooth and elastic. Return it to the bowl, cover, and let rise until doubled in size (about 1 hour).

4. Prep the Air Fryer

Drizzle a little olive oil into your air fryer drawer or basket.
Gently transfer the dough into it and stretch it to fit. Don’t worry if it doesn’t reach the edges—just prod it all over with your fingers.

5. Add Toppings & Prove Again

Drizzle with olive oil, sprinkle with fresh rosemary, sliced garlic, and a bit of sea salt.
Let the dough prove again inside the air fryer (turned off) for 45 minutes.

6. Bake in the Air Fryer

  • Bake at 190°C (375°F) for 15 minutes

  • Flip the focaccia carefully

  • Bake for another 7 minutes

7. Finish & Cool

Drizzle more olive oil over the top as soon as it comes out. Transfer to a wire rack to cool slightly.


Tips

  • No fresh rosemary? Dried works fine—just use a little less.

  • Crispier bottom? Try preheating your air fryer basket.

  • Serve with: Soup, pasta, or a balsamic-olive oil dip.
