INGREDIENTS

  • 1 cup Natural Peanut Butter
  • 1/2 cup Unsalted Butter 1 Stick
  • 1/3 cup Low Carb Sugar Substitute
  • 10-20 drops Liquid Stevia
  • 2 tsp vanilla extract
  • Flakey Salt is Optional for top

INSTRUCTIONS

  1. Line a loaf pan with parchment paper and set aside.
  2. In a microwave-safe bowl, add the butter, and microwave it until completely melted.
  3. Add in the erythritol and stevia, and whisk well. Microwave in 30-second intervals, whisking in between until all the sweetener is melted.
  4. Add in the peanut butter and vanilla extract. Whisk until a homogeneous mixture forms.
  5. Pour the mixture into the lined pan, and sprinkle some flakey salt on top if desired.
  6. Refrigerate until set at least for an hour.
  7. Cut into 14 2×2 inch pieces or smaller.
  8. Store in an airtight container in the fridge.

  1. If your homemade peanut butter is too runny, don’t use it. Use peanut butter only from products with a firm consistency.
